I replaced the thermostat, it overheats going up hills, if I turn the AC on the temperature guage goes down, the radiator is not hot when I stop at times it is overheating and then it corrects itself and the guage goes back down

How about a temperature sensor? If it's faulty it could be sending the wrong messages to your computer and your dash light.
