This is an indication that the bearings in the engine have become so worn that when the oil is hot and thinner, it flows out of them too easily and the oil pump cannot provide the volume required to keep the oil pressure at a safe level. Your engine is likely on it's way out. You could try changing the oil pressure sensor, sometimes they go bad and falsely turn on the warning light, but usually this is just wishful thinking. Checking the oil pressure with an external gauge would confirm this.
I would suggest replacing the oil sending unit, they will go bad,and cause this to happen,if this does not help,it can be the oil pump,or the main, and rod bearings wearing out.
