After taking out and putting back in my sim card I lost most of my contacts, now I can't add an image or add more than 2 numbers per contacts. I've tried another sim and its the same

That is because they are in your phone memory, not the sim card memory.
You will need to go to the contact setting and change it to phone memory.
For future reference each cell phone is a little different, but most have a menu item under each contact which says something like save to SIM. The contact list when saved will often show more than one listing. Often one has to save each phone number individually because the SIM doesn't save contact information in the same complex fashion as you phone does.
