Cooling system issues
Hello- I have a 1986 Maxim X (750 cc in Canada) and it takes a long time to heat up, then it gets really hot, cools down again (as you ride). Does this sound like the thermostat? Fan also is not coming on.
Can ride for 20 minutes without the temp gauge moving, then it spikes, and drops back down.

Sounds like combination of possible sticking thermostat and or fan too,, find the temp switch that should be on the radiator and jump it out to see if the fan works or not.
