Frequently customers do not hold the pilot "lite" button down long enough for the fryer to light. We normally instruct them to hold the pilot lite button in for some time, then light it, and after it lights, turn thermostat back to your regular setting. People get alarmed that they have to hold the button in as long as they do, but that is what it takes to light these units up, so hold it in longer, then light.
