You might need a new igniter. First, if you know what and where it is, try cleaning it because it might have something spilled on it that causes it not to light and spark the gas. If cleaning it does not do it, then you might have to get a new igniter which should be cheap.
It is gas pressure problem have a check to see if there is a gas regulator in line with the gas pipe to the fryer if so adjust regulator.
The safety valve is controlled by a thermocouple, test and eventually replace the thermocouple.
There is a thermocouple that will close the valve in the eventuality that there is not enough heat. This is a safety device to turn off the gas if flame goes off.
Find and test the thermocouple.
