Aircraft tracer trails (or contrails, or condensation trails) which form in certain atmospheric conditions are created when the moisture in the jet exhaust is expelled into the atmosphere. It's the same phenomenon as exhaling on a cold winter day and you can see your breath. The water condensates and creates a white cloud.
