The charcoal goes in the very bottom. If you are using chips, if you soak them 15 minute prior to putting them in, they will last a little longer. This all depends on how much smoke flavor you want. If you want a lot of smoke flavor you can put them in dry and add more every 10 to 15 minutes. You put the chips right on the hot coals.
You can also use chunks with this unit. If you are going to use chunks, you put the chunks right in the bowl shaped tray that sits on clips above the coals. Chunks last longer and you don't have to add as often.
It all comes down to how much smokey flavor you want. In time you will find what you like best.
I am actually read to start smoking cheese again soon. you can only really do it when its cold out, and its starting to get there. You have make sure its not too hot or the cheese will melt. You want to keep the temp no hotter then 100 degrees. There is nothing better then some smoked cheddar or even american. Cheaper the cheese the better because you are adding your own flavor.
