I bought a Zojirushi BBCC V20 years ago, brand new, and it hasn't made a decent loaf yet. The center of every loaf (between the paddles) does not rise. I finally quit using it after a dozen trie
Dozen tries+ using this expensive machine! Not one loaf has raised in the center (between the paddles). Tried every variable I can think of. A breath away from trashing a "new" machine. Bought this unit new a few years ago and it has NEVER made a decent loaf. Dipped in center and texture not good. Finally just gave up and went back to baking in the oven.

I know this is 7 years after the fact, but I found that my dough would rise higher than the lid would allow, and when the dough reached the top, it would basically “pop” the dough like a balloon; this would cause the bread to fail, if I let it bake in the machine. I usually let the machine make the dough for me, then take the dough out of the machine to rise and bake.
Another thought is to us a little less yeast.
What kind of flour were you using? bread flour or all purpose etc. ?
