I have a Vulcan lg400 propane fryer I have used 4 times at outdoor catering events over the last year yesterday while using it it began what I would call backdrafting. could low propane level in bottle cause this?

It sure did. Never use a gas fryer in low gas pressure for a long time for soot will build up inside the fire tubes.
Check and clean fire tubes, make sure that the flue is not restricted and there should be no air entering the flue.
