I messed up "Site Definition" in the "Advanced" Section
I was going to switch hosting providers so I wiped out the connecting login stuff. How in the world do I retrieve, or fix all the stuff I screwed up?
I have a large 3-ring of info but doubt it would help with everything I screwed up.

You are required to contact your hosting provider. In case you have switched your hosting provider then they are supposed to give these details when you start using their service.
Dreamweaver uses only the same login and protocols that are used for all website logins just set the login up again with username and password and you should be able to post the website again
