I need the sequence of operation for a Pitco 35C+S fryer.( Natural gas). Can anyone help? My problem is that after units pilot goes out. When I re-light pilot, then turn the gas valve to on (with the thermostat off) the burners come on. When they do they have high pressure that drops back to normal within seconds. The fryer will stay on and when you set the thermostat, it operates normaly. Trying to deside if I have a bad gas valve or a bad thermostat. Can the gas valve over ride the thermostat with pressure or a signal?

Regardingyour problem, I am not very confident with this type of fryer, howeverafter giving a look at the schematics I think that you should check theorifice and the thermocouple on pilot, part 5 on diagram below:
Ithink that excluding the mechanical thermostat part 14 below should notprevent the machine from working, however if the thermostat is faultyit may stop the gas flow.
