I'd also take a further look into your ice machine. Please note that hoshizaki ice machines come in a variety of models and sizes. View there different types here -> Refrigerators
Time the cycle. if it is only running about 5 minutes and going into harvest, look for sump loosing water. Look at where the unit drains (like a floor drain) while the unit is running to see how much, if any water is draining. does not take much to make an early harvest. also, sump may not be filling up completely but with just enough water to satisfy the float.
I agree clean float assy and take check valve apart make sure nothing is stick it open allowing g you water to drain out. Also there is a rubber grommet that wears out over time. Hoshi works by filling with water and once float says hey enough water is missing from initial fill so it's all frozen into ice, and it initiates harvest. This float can be adjusted and cleaned. Or the check valve allowing the water to leave could trick the float and instead of the water being frozen it has slipped out through the stuck open check valve. Most float switches don't talk thoughI agree clean float assy and take check valve apart make sure nothing is stick it open allowing g you water to drain out.
