I've had a couple of bulbs burn out in my dash of my 97 GMC Yukon and want to replace them myself. where can i find a diagram of how to take the dash apart?

Buy a repair manual from a auto parts store. Haynes manuals give you a good walk through on how to disassemble the dash. 24065 is the Haynes manual you will need for your truck.
