This is the safety system: you must keep the button pressed for about 10 seconds until the thermal switch heats up and keeps the valve/knob open. If the gas cuts out the moment you release the button even if you kept it pressed long enough before, it means that the thermal switch is faulty and it will have to be replaced. This is a job that must be left to a pro: the switch is part of the valve body and it will have to be replaced as a whole. On top of that the tube that connects the sensor near the flame to the switch on the valve goes all the way thru the range - to take it out and install the new one the entire range will have to be dismantled.
