My grundfos mq3-35b is used in a presuurised domestic system. It recently ran dry so I turned it off until the supply came back. Since I have turned it back on he pressure guage on the outlet now reads 5.5bar. From memory it always used to be 2 bar. Is this a problem? Otherwise, the pump appears to be running as normal

No this is not a problem at all. What you are probably remembering is the pressure when the supply was getting low. When it has a lower supply it will not be able to pump as much pressure. With a higher supply, it will pump more pressure. But this is perfectly ok.
