My Vulcan fryers heat up without problems. Once I cook product in it, it does not recover very fast at all. It will drop from 350 to 250 then it takes about 10 minutes to cook fries in it
Forgive my answer but you need to look at the situation by standing back a bit. You have heated the fryer up, but then you load it with product that is not at 350 degrees and the fryer must now take that 10 minutes to pull it's temp + product back up to temperature. That is as if I am understanding your question
