The coffee comes out bitter on my Delonghi Magnifica
I think this is because the water is heating up past 175 degrees. Have a fully automatic Jura Capresso at the office and same beans taste super. Is there a way to get my DeLonghi's water temperature set to 175?

Your machine is fully automatic and the manufacturer has left you with only two temperature settings. The logic behind giving two temperature settings is that few like it hot and few like mild. Hence, If you wish to lower down your temperature and your current temperature is high or vice versa can be done.
Temperature control! For that extra hot Cappuccino or Latte move the frothXpress Plus dial from the "-" settings towards the "+" settings to increase the temperature.

Just got back home. Went to the menu to see that someone (housekeeper?) had turned the temp up to Extra Hot. I dialed it down via the menu and all is well. Thanks for your (and everyone's) great help.
Coffee tastes bitter due to dusty got collected in the interior.Clean the filter as well as the interior of the machine. Then check out. First thing to do is clean your coffee maker, people don’t realize that this is necessary. Pick up a coffee maker cleaner or us something like CLR deluded in lots of water.
Next, if the occasional coffee is bitter the trick to fixing it is a pinch of salt. By pinch I mean just a few grains. The sodium reacts with the acids in the coffee and removes the bitter taste.
clean your coffee maker with white vinegar and water. Run it through a few times then run clear water tho a few times.
But still if the coffee taste is similar and no change then yes its the problem of warming plate in the coffee maker.Its getting overheated and coffee is getting overheated from what is not required and the taste changes.The heater unit needs to be checked.If the element is short it needs to be replaced.

One more comment/question. Since this is a fully automatic coffee maker, it does not allow me to run vinegar/water, or just water through the coffee maker without grinding and compressing beans. How do you suggest I run the vinegar solution through the machine? Should I just brew beans with the vinegar?
yes that is the only option in automatic coffee machines to run vinegar.
