We have a commercial Hobart dish washer Model # AM-8T2; Serial # 240461. We cannot get the wash temperature to go above 120' to 150' as the burner does not light. The pilot is on. A new thermocouple was installed but made no difference. The rinse temp goes up to 180'. How can we get the gas burner to light and stay on. Thank you. Gery Spory
Hello Gery - get the repairman back who installed that thermocouple as that repair includes making sure the unit is working properly. Most likely the thermocouple is simply not warming up enough to operate correctly. It may be that the pilot light needs an adjustment. Joe

You say thermocouple replaced? - was this controlling the main gas valve or turning off when temperature is reached ?
There will be a pilot light sensor (actually in the flame when lit), that allows the main gas valve to open when it is hot. If the burner does not ignite after 10 seconds of the pilot being lit - then it is the main gas valve needing to be replaced (including pilot sensor)
The other reason would be an adjustment on the upper limit temperature sensor - but this would only apply if the burner was working - but turned off before reaching desired temperature.
Yes, the main gas valve is still a replaceable part, but should be fitted by a qualified gas engineer - for obvious reasons.
I think you've narrowed the problem down to this gas valve, as adjustment of the upper limit switch does not improve things.
