Why do my pitco fryer have excess soot and keep making a loud popping sound

I am using propane as fuel, after the popping sound the fuel will jump to the lower part of the burner

Hi There.
Check and ensure that the unit receives correct gas pressure during operation as written on nameplate; make sure that the unit also has the correct orifice size for the type of fuel currently used.
