I received a Zooper (2002) from a friend also and never recieved a manual. I have had it for a year (great stroller) and just found out that the seat can be reversed. It would have been handy to know this during the winter when my baby was small. Anyway - if you haven't already tried - the www.zopper.com website has a service request form where you can request a manual or other parts. The manual is 10.00 plus GST & S/H. Hope this helps.
As for the padding - if you haven't already worked it out - everything is snapped on or zelcroed. The safety belts push through the holes in the seat. Just keep unsnapping and pulling eventually it all comes off in one piece. The back of the hood unzips - maybe a couple snaps too. The only part that I could not remove was the hood cover.
